Cooking for yourself really is simple and easy. Don’t let anyone tell you it’s not.
Okay, okay, some people make these gourmet meals and post pictures of their process, and it’s beautiful and incredible and slightly complicated and makes you feel like “cooking is too hard for me”. I even do this sometimes.
However, when you’re a busy bee, this isn’t practical for every meal. It’s just not.
Enter foil packs and one-pan meals. Limited clean up (my fav!), limited prep time, limited cooking time. Simple for one person or one meal, or even a meal prep for a few days.
Yup. This exists. And this is real life. Most of the time, my meals are actually quite simple. Usually a protein, veggie, and a healthy fat mixed together and thrown in either the oven or a skillet. I’ll make a big batch of something like this at the beginning of the week or weekend and heat it up when I’m ready to eat that serving.
Try this Salmon and Asparagus Foil Pack for instance. Takes less than 5 minutes to prep, 20 - 25 minutes to bake, and less than 5 minutes to clean up. Consuming the meal takes as short or long as you may need!
SALMON AND ASPARAGUS IN FOIL Cook Time: 30 minutes | Serves: 1
1 piece Salmon
1/2 Bunch Asparagus
1/2 Lemon
2 Cloves Garlic
1 Tsp Cayenne
1 Tsp Rosemary
Salt to taste
Extra Virgin Olive Oil
Place Salmon and Asparagus with root-ends cut off side by side on tin foil.
Drizzle EVOO over both.
Add salt and garlic to both.
Add cayenne and rosemary to Salmon only. Gently rub spices into Salmon.
Add a few slices of lemon onto Salmon.
Squeeze remaining lemon juice over both Salmon and Asparagus.
Pack up and close tin foil.
Bake in oven at 425° for 20 - 25 minutes, until Salmon is cooked thoroughly.
